I recently discovered how to make a one block world in Minecraft.
*If you've heard of the laggy "falling sand world" trick, you don't have to worry about this one ;D
Step 1.Create a new world (you might want to put it on creative mode)
Step 2.Click the "Customize" button below the Superflat World option.
Step 3.Click "Presets".
Step 4.Paste this onto the top bar wtih the world generator code: 2;1x0;2;
Step 5.Create the world.
Step 6.As you will see, there isn't a single block in sight.
Step 7. Don't panic! Use the command /setblock minecraft:Grass ~0 ~0 ~0
Step 8.If you look around, you'll be lucky to see a single block in mid-air.
You're done! Have fun building in an empty canvas. :)
*EDIT: The right command is: /setblock ~0 ~0 ~0 minecraft:grass

Also, you don't have to use "~0 ~0 ~0" you can just type the ~'s :P
