Writing can be reread and you can think more. Speech is rather spontan and sign language can be messy if you show a word wrong(why do you want to play that!?)

Depends on one's purpose:
Speaking has long been considered best for swaying opinion or presenting non-quantifiable arguments, particularly since there is a greater 'bandwidth' (considering such things as facial expression, body language, and vocal cadence and tone)
Writing is best for precision (the reader being able to move about within a document to crosscheck or refresh memory), and is faster (for most people as normal speech is only ~250-300 wpm).
It is also far easier to access (even with the interwebby, text is much cheaper / faster than audio) and to search — advantages that become even more pronounced when considering the 'dead-tree' formats.
