Vex's. Stuff like a rabbit is easy to kill with a bow and most large mobs can be captured in a boat and can still be easily hit with a bow, while the vex can go through solid walls and sneak attack you like a Vietnam.

for me its wither skeleton,they give you wither effect,and wither can kill you

Vexes are almost impossible to kill, but you don´t have to, and they will die sooner or later because of in-game mechanics.
Also, it depends of the equipment you´re wearing!

Vex is the most hardest one to kill, because he can go through walls, portals and attack underwater.
I fight better underwater for some reason

Would it Evoker? They spawn Vexes.
I find that killing the evoker itself isn't that hard but fighting the vexes afterward is very annoying because of their high damage and small hitbox
