Why not both? Try forge first and then make a copy, yet for fabric

Since your using mcreator why not both? its not like you need to learn the APIs of any in particular

Mod loaders take some of the coding burden off the process and provide some help with cross mod compatibility issues (the latter seems to have been one of the major motivating factors in their creation), but result in fracturing the community of users along lines of which is used (e.g. the fabric vs forge question)
