Yes, I've also heard "Haste is the enemy of perfection." "To Caesar what belongs to Caesar, to God what belongs to God.", "Looks can be deceiving." and "Better to ask the way than go astray."
Yup. There's also

Sounds like you haven't been around old people enough. There's also "you're beating a dead horse," "you can lead a horse to water but you can't make it drink," "hold onto your hat and don't stand up," "give a man a fish and he'll eat for a day, teach him to fish and he'll eat for a lifetime," "cross that bridge when you get to it"...
