I'd love to have a Superflat biome where terrain (as opposed to structures or trees) cannot generate above Y=62, but where the world still has its normal diverse range of biomes, including jungles, swamps, oceans, rivers, and mushroom fields, and which also contains the normal assortment of resources and ores.
Is there a datapack out there that does that?

Hey, thanks! But there's a problem: The aqua biomes don't seem to load properly.
I used a command to search for a mushroom fields biome. Those are always supposed to be islands surrounded by deep ocean. However, when I teleported to the biome, it was surrounded by grassy plains. When I pressed F3 to pull up the debug menu, it still said the biome was "deep ocean," but I was standing on solid ground.
My random seed is -6817391374897860619 and the mushroom field biome I am currently located in is at coordinates -1461, 63, 1413, if you want to check to see for yourself.

If I made oceans then it wouldn't be flat.
Yes it would! Just make it so that water source blocks don't naturally generate above Y=62.
In theory you could make it just a flat layer of water, like the oceans world super flat preset :)
