I have made a texture pack that makes every biome look like mushroom island
But it uses some of the default textures just in different places, like mushroom blocks for leaves and mushroom stem for logs.
Is this allowed or does it break copyright rules?

You can use the default textures whenever you want. Just be sure to throw in some originality. You don't want it all to be reused textures.
Everything is a mushroom?! I mean, if that's your artistic expression then go for it
