I believe you have all the recipes being given to the player consistently (something like: /recipe give @s *), the crafting system works by detecting when you unlock the custom recipe (by crafting it) and proceeds to give you the corresponding item. I am sorry, but I do not believe that I can fix this on my end.

I do not belive you installed the datapack properly, you can use an online tutorial like such to resolve this:
