What's the rarest thing you've ever found in Minecraft?

i havent found that many rare things but i found an ancient debri 5 vein, and only once ever
i thought they made deepslate coal literally impossible to get in survival, if i remember correctly didnt they change it so coal stops spawning like 5 blocks before deepstlate starts? i have 1 deepslate emerald tho
I think it would be a 7 vain of diamonds in the current 1.18 world generation.
a Woodland mansion and a stronghold extremely close to each other alongside a mini very village nearby and a ruined portal that was kind of far but still in the same biome

I remember spamming Stray spawn eggs back in Java Edition 1.13 and absolutely no lie, I managed to spawn one with diamond armor.. Another time on Xbox 360 Edition I was randomly spawning cave spiders and all of a sudden I got a cave spider jockey, I did this 3 times, one with a skeleton, another with a stray, and another with a wither skeleton......

I've seen at least 2 pink sheep, but I think the rarest thing I've found one of these:
- Woodland Mansion next to pillager outpost directly at world spawn
- Baby zombie in full gold armor riding a chicken
- I guess pink sheep too
hmm. i've found a couple 5-block-tall sugar cane before, if that counts
The rarest thing I've found was double zombie spawners with a "Glitched Tripple Chest". These were very rare and yes the chest had three inventories of space in it.
Chicken Jockey with [partial] diamond armor (that dropped).
