As long as you don't mess around with the files in the world folders you should be completely fine!
Nope. That’s just the platform your server is running. Everything related to your items is stored in level.dat and chunks are stored in the region folder of each world. Changing server platform shouldn’t effect this

You should use Paper instead of Spigot to take advantage of its high performance.
