Making texture packs for the older versions is difficult, especially if you have no experience with making texture packs at all. Try your hand at making texture packs for a modern version, at the very least to get the hang of it, then move onto older stuff. I don't even know if you can make texture packs for beta 1.0, at that stage you would likely have to edit the game files manually.
