I would tell you about jailbreaking, but I believe it's against PMC rules.
I have just tried that method and it works fine.
1.set date to january 1st 2012 [important]
2.go to this site http://emu4ios.net/
3. scroll down on ipad to recordscreen
4. hit install
5. set date back after opening recordscreen atleast once.
*NO JAILBREAK REQUIRED*

Look up emu4ios. there are a ton of emulators and I believe there should be a screen recording software that doesn't require a jailbreak

Jailbreak your device, go to Cydia, go to search type in: RecordMyScreen. Click on the one that says: RecordMyScreen (Tweak). Install it, go into settings, go to RecordMyScreen, and set up everything you want.
