What this does :
This datapack makes changes to Pigs, Cows, Sheep and Chickens mimicking beta's animal mechanics
Horses, Rabbits, Polar bears, Fish , Foxes, Goats and Frogs aren't affected
Breeding for Pigs, Cows, Sheep and Chickens is disabled, feeding them will instead heal them
These mobs will also now despawn when 128 blocks away from a player unless they are named
The passive mob cap is set by default at 30 and increases for every player on the server up to a maximum of 128
The passive mob count isn't increased by named mobs
Spawning work like this :
Chooses a random spot withing a 257x257 square surrounding a random player
Goes to the highest block at that position
Checks if the block below is a grass block
Checks if the the block is between light levels 9 to 15
Chooses a mob from a list of 4
Checks if the the amount of passive mobs that exist is below the cap
Spawns the mob
Installation guide :
During world creation :
Download the datapack
During world creation, press the datapacks button
Drag the zip from your downloads folder to the minecraft window
Click on the datapack to move it from available to selected
Press done
Start your world
After world creation :
Navigate to your saves folder in .minecraft
Open the world folder of the world you want to install it in
Open the datapacks folder
Place the zip in said folder
Restart the world

Since I want one for 1.18 - 1.19. Which is the ones I found are only up to 1.17.
