    It is actually possible to make this without changing up the bundle texture
    you just use CustomModelData

    Because Bundle is an 1.17 item, it can't works on 1.16.

    Really smart way to add backpacks. I tried lots of times putting an item with custom model on the left hand to apply it to the back of the player and it always was horrible to see while moving. I'm curious to know what display thirdperson_lefthand your model has.
    Also, since you save the horse inventory somewhere, is this datapack multiplayer?

    For the first question, you can open resource pack to view the json file of the model.

    For the second question, I only changed the bundle model, and did not generate any invisible horse, so I think if everyone has this resource pack, it can be used in multiplayer mode.

    Personally, I don't like datapacks modifying default minecraft items/blocks. But, in this case, it's not a problem, since Bundles are like backpacks.

    But I don't remember Bundle has a gui. It's the horse gui the one I see in the video.

    Edit: I see your datapack is just inspired from that video. Your datapack in fact just changes the model of the bundle.
