This is just my opinion in why I miss the older days of minecraft and specifically the 1.7.3 update which I thought was where Minecraft was at its best point. But take note that I wrote this when the 1.6 Update came out. I explain why down at the bottom! anyway enjoy your reading of my opinions!
I recon 1.7.3 was the best and will always be the best point in minecraft. It has that adventurous touch and I love how the world would generate where you would always see something new and now its always, "Oh look a mountain biome.." Like to be honest there's nothing fun about how the world generates anymore. Mostly because you have already explored the different biomes and you know whats in store.. I really miss that feeling of exploring and finding something new around every corner.
Another thing I missed about the 1.7.3 Update and all the other earlier beta days was how the sun would set. It would set in like stages and you would know, "Oh crap I gotta get home!" Now with how you can change the brightness and the sun doesn't set in stages, you don't really have that urge to get home and not die. Also with sprint, I like it but I don't like it. It took away the feeling of knowing that there was something behind you and you couldn't outrun it.
One more thing that I deeply miss is the old sounds. The Door open and close, Creeper explosions, Throwing eggs or shooting bows, the old sound of cows, pigs and the nice simplistic feeling of all the other sounds. Now with the new sounds the game is becoming more realistic and not the adventure cartoonist type you would want in a game like this. Also the sound of the door sounds almost like a rabbit died.
Just I guess you could say minecraft isn't as fun as it used to be. Also with the fact that you cant have as much fun playing by yourself and you used to. also with all the servers, it was fun to go and play and meet new people, now its like you must kill, horde your stuff underground and just sit there hopping no one raids it. I miss when griefing was shamed upon on the freebuild servers and no one did it, and raiding and griefing servers were not op and the bases were more fun to raid. But now when you raid you have to take the enchanted stuff or the op things. I just honestly don't find that fun. You guys probably all have different opinions but this is mine so yea.
I guess you could just say I miss how simple and adventurous minecraft used to be...

Edit: With the new 1.7.2 Update, Minecraft has become much MUCH better and I've started to enjoy it more with the new biomes! they've added much more color and the exploration aspect of the game has sky rocketed! But I also didn't feel like editing the whole thing around the thought of 1.7.2 so yea.

P.S. Playing since alpha, that was the most memorable minecraft, not because it was something new, but because it actually felt like a survival game where you had to mine and build your game. I miss it :(
