Minecraft 1.17 snapshot 20w49a adds dripstone and pointed dripstone (that form stalagmites and stalactites) cave generation.
You will have to create a new world Minecraft world to generate the new dripstone and pointed dripstone cave biome generation.
Dripstone Caves are another new cave biome that was announced at Minecraft Live 2020 and will be added in the Minecraft 1.17 Cave and Cliffs update! Mojang have not told us how we find Dripstone Caves but they have told us that they mainly consist of Stalactites / Stalagmites (also known as Dripstones).
There is a third variant of Dripstone that was not announced at Minecraft Live 2020. It is made of the same material as Stalactites and Stalagmites but it is a grey block.
Stalactites drip water (or lava if there is lava above the ceiling) and thrown tridents break pointed dripstone!
