The minecraft bukkit plugin "Brewery" has lots of information on their wiki page, but nothing on how to make your default drinks. I personally had lots of trouble finding out how this plugin worked in the actual process, so I decided I would make a short tutorial about the plugin brewing (dev.bukkit.org/bukkit-plugins/brewery/).
In the default configuration there are basic plants you can ferment (Wheat, Potatoes, Sugar Canes, Red Mushrooms, Grass.) In order to create a drink you first must make a base, this requires these ingredients. But you must be careful, for example for rum you can't put in 13 sugar cane or 15, but you need 14.
Now that you have your base you can either age or distill it, only certain drinks can be distilled and only some drinks can be aged, like vodka that if aged will become ruined. In order to age something you make a barrel and place the drink base in the Fass. If you did the ingredients correctly, the base should eventually become a drink. Otherwise it will become a ruined potion, witch can still get you drunk but may poison you. The potion after it is done, if not removed from the barrel will have lore that will explain what is good/bad with the potion. If the letters are green it is good if it is red it is bad. Some drinks require time to ferment, if you did not get the correct time the potion will say (#) minutes fermented in red coloring, if it is correct it will be green and you will know how to ferment that drink correctly in the cauldron.
Also distilling is fairly simple, you place the drink in a brewing stand with glow stone and it will become a potion (if done correctly).
In conclusion, "Brewery" is alot of trail and error for players, unless they know the recipes.
