To me, Piglins are a creative take to freshening up the nether. They offer some really unique functionality for late game playeers, which leads to amazing new farms to keep the redstone megaminds occupied for a few days, really nice challenge for mid-game players just entering the nether, and a very good speedrunning tactic which has revolutionized the field. Yes, piglins did move away from the original game design, but that's ok. In the end, Mojang studios is a team of artists who should get to make some bold strokes in their own creation. And piglins are a massive reason to actually visit the nether after you get netherite.
